Thengai Pal Sadam / Coconut Milk Rice

Hi Friends Happy to blog after a great weekend.Today the resource is a festive rice preparation .This rice is cooked in coconut milk with all the flavours of whole spices.This is a very authentic dish of Tamilnadu.This goes well with spicy chicken Kurma .But I  served with veg-kurma as we don’t prefer NV on saturdays.Believe me this is one of  a Yummy rice preparation…Have it a go….You too will love it…

Ingredients

Basmati Rice – 2 cups

Onion – 1 sliced

Tomato – 1 small sized, chopped (if big one use half)

Green chilli – 4 (make slit in the centre)

Garlic  – 2 ,full cloves(20 –25 pods)

Ginger – 1 inch piece

Coconut – 1/2

Pudhina / Mint leaves – a hand full

Salt to taste

For Tempering

Ghee / Oil – 3 tbsp

Cinnamon / Pattai – 3 small pieces

Cardamom / Elachi – 2

Cloves / Kirambu – 1 or 2

Bay leaves / Birinji ilai – 2

StarAnise / Annasipoo – 1

Fennel seeds / Sombu – 1/2 tsp

 

Coarsely grind the Ginger and Garlic (Don’t make it a fine paste). Extract the coconut milk from the coconut and keep it aside.Soak the rice for 30 mins.And wash and drain the water and set aside.

 

Preparation

 

Grab all your ingredients.

Heat oil in a cooker and add the ingredients under tempering and fry for a min.Add the sliced onion and green chillies and fry till transparent.

Add the grounded ginger garlic and fry till the raw smell goes off.

Add the tomato and fry till mushy.

Now add the mint leaves and fry for 2 mins.

Heat a tsp of ghee in a kadai and fry the rice till shiny.Take care not to burn the rice.Add the rice in the cooker and give it a mix.

Then add 31/2 cups of  coconut milk ( For 1 cup rice 1 3/4 cups of coconut milk) .Then add the required salt and mix well .

Close the lid of the pressure cooker and leave for 1 whistle and simmer for another 10 mins and  switch  off.Open it after all the pressure goes by itself.

Serve the Yummy rice with Vegetable kurma or Chicken kurma.

I got tagged by my co-blogger friend Divya of  “You too an cook Indian Food Recipes ” to show my Anjera petti / Spice box. She is a very wonderful blogger with new innovative recipes.

But mow I am not using spice box  .When my kid was 2 yrs old he used to be  always with me on my hip.While cooking too i will make sit on the slab rigth opp.. to the stove.My spice box was so colourful and a attractive one which I bought from my home town ,Dindigul.He used to take that and mix all the items and it was a big work for me to seperate things.So I quit using that box.But now he is 5yrs so I think of start using..Thanks to Divya  for  tagging me  and make me remind of Anjera petti  .I need to search her in Leeds for the spice box and will sure post after getting it.
