Hi friends ,
Today I come with a chicken recipe .This is one of the wonderful recipe I learnt from my mom.I am a big fan of this kurma from my childhood.Whenever my mom plan to do briyani for lunch she will prepare this kurma in large quantity for breakfast .We have it with soft idlis.Believe me this a delicious side for hot idlis.A person who normally has 4-5 will have nearly double the quantity with this yummy side .And we will have the rest of the kurma with briyani for lunch.This is a good accomplishment with Briyani.Generally my mom prepares this kurma with mutton.But I don’t find soft mutton in my place so I used chicken.It tasted fabulous and my hubby loved it. Ingredients
Chicken – 1/2 kg
Onion – 1/2 chopped finely
Garlic cloves – 4 sliced
Coriander powder – 1/2 tsp
Lemon – half fruit
Coriander leaves / Cilantro – 3 tsp chopped
Salt to taste
For Grinding
Coconut – 1/2 ( grated or chopped)
Green chillies – 4 (Add as per your spice level)
Fennel seeds / Sombu – 1/2 tsp
Cashew nuts – 7
For Tempering
Oil – 2 tbspn
Cinnamon / Pattai – 3 small pieces
Cardamom / Elachi – 1
Star anise / Annasi poo – 1
Fennel seeds / Sombu – 1/2 tsp
Bay leaves / Briyani ilai – 2
Preparation
Wash the chicken several times with lots of water.Heat a kadai with 1 tsp oil and add the chicken and fry till colour changes that is for 3-4 mins.
Add 1 cup water and little salt and cook till the meat turns tender.And Keep it aside.
Heat a tsp of oil in a kadai and fry the greenchilles for a min.Take a mixer and add all the ingredients under grinding with the fried chilli and ground to a fine paste using enough water.
Heat oil in a kadai and add the ingredients under tempering and fry for a min.Take care not to burn them.
Add the onions and garlic and fry for 2 more mins.
Now add the cooked chicken and grounded masala with enough water and mix well.
Add required salt(remember we have added salt while cooking the chicken) and coriander powder mix well.Allow it to boil for 10 mins and simmer it for 2 more mins and switch off.
Now squeeze the half lemon and add chopped cilantro and give a mix .
Serve this Kurma with hot Idlis or with Chicken Briyani.

Notes :
For a nice aroma you can add some chopped mint leaves , some chopped cilantro and curry leaves while tempering. This will give a wonderful flavour to the kurma.

ReplyDeleteYou can make this curry without dropping any of the ingredients for 250 gms of chicken. Just minimise the amount of coconut, that's enough.
