Chicken Curry Using Fresh Masala

There are many variations to make a basic chicken curry recipe and today I love to share this chicken curry that is prepared with few fresh ingredients from the kitchen pantry. There are some few recipes in our menu that we don’t feel bored while making them often and often . One such recipe is this chicken curry.  And this curry will catch its presence in most of the occasions like get together / parties / at weekends . So its clear to you that this curry is thoroughly enjoyed by my family  . This curry tastes great with plain rice . The preparation is quite simple  and I believe this will sure  occupy your to-do list.  Basically I am fond of chicken and after coming to UK the only non-veg we used to buy is chicken . So I love trying lots of variations in my chicken curry . I tried the same curry with coconut paste , but  it tastes fabulous only without the coconut touch. But however now-a-days we started buying mutton too. I prepared mutton chukka last week and waiting to share with you guys soon. Lets see the preparation of this simple Chicken curry ….

Chicken Curry

Ingredients

Chicken – 1 kg

Onion – 2 chopped

Tomato – 1 big sized  / 2 small sized ,  chopped

Green Chillies – 1 sliced

Turmeric powder / Manjal thool – 1/2 tsp

Chilli powder / Milagai thool – 1 tsp

Oil – 2 tbsp

Salt to taste

For Masala Powder

Corriander seeds / Kothamalli vithai – 1 1/2 tbsp

Pepper corns  / Milagu – 1 tsp

Fennel seeds / Sombu – 1/2 tsp 

Cinnamon / Pattai – 2 small sticks

Elachi  - 1

Garlic – 4 cloves

Ginger – 1 inch piece

Preparation

Take the ingredients ready for the masala powder .

Heat a kadai and add the ingredients for the masala powder one by one and fry in medium flame till a nice aroma rises from it and switch off the flame. (Take care not to burn them).

Let it cool and transfer it to a blender and blend it well . ( I added ginger and garlic while grinding the masala powder because I don’t have the  paste at that time . If you have the paste then omit adding to the masala powder and Add 1 tsp ginger garlic paste after frying the onions ).

Heat oil in a cooker . Add the chopped onions and green chillies and fry till transparent or soft .

Add the chopped tomato and cook till mushy .

Add the grounded masala powder and mix it well .

Add the turmeric and chilli powder and mix well again.

Now add the cleaned chicken and fry for few mins or till colour change.

Add required salt and 1/2 cup water and mix well. Always add little amount of water as the chicken also releases water from it , else the gravy will become more watery.

Pressure cook for a whistle and Keep in low flame for 5 mins and switch off . Chicken gets cooked faster so don’t let it cook for a  longer time then it may scrambled in to tiny pieces. After the pressure releases by itself open the cooker and serve hot with plain rice or rotis. If you find the gravy more watery allow to boil till you reach your desired consistency .
