This is a very simple potato fry but tastes delicious with any combination of rice.Whether it is Sambar rice / Rasam rice/ Curd rice / any mixed rice this is the best combo.Potato fry can be made with lots of variations but the taste never disappoints you.Potatoes are always everyones favourite, I can eat anything made from potatoes . Now to this quick recipe…
Ingredients
Potato – 6 medium sized , boiled and cubed
Onion - 1 chopped
Turmeric powder / Manjal Thool – 1/4 tsp
Chilli powder / Milagai Thool - 1/2 tsp
Coriander powder / Kothamalli Thool – 1/2 tsp
Mustard seeds / Kadugu – 1/2 tsp
Urad dal / Ulunthamparuppu – 1/2 tsp
Asafoetida / Perungayathool – 2 pinches
Curry leaves – 1 spring
Salt as needed
Oil – 3 tsp
Preparation
Heat oil in a Kadai and Splutter mustard seeds and uraddal .Add asafoetida and curry leaves and saute for a min.
Add the onions and fry till they become brown.
Throw the potatoes in and add turmeric powder, chilli powder, coriander powder and salt and mix well.
Keep in medium flame and fry till they are nicely coated with the masala and becomes crispy.
Serve it with any rice you like .we had with sambar rice.
sambar with this fry makes an awesome combo :)
