Hi Friends ,
This is a simple side that goes well with sambar rice / curd rice / any mixed rice. And its so easy to make and tastes delicious. My mom prepares this side frequently.I love the flavour. In my place I see this veggie very rarely.Last week I saw this in an Indian shop and at once bought it.Here comes the preparation .Try this simple yummy stir fry…..
Ingredients
Avarakkai / Broad beans – 250 gms
Onion – 1/2 of a big one, chopped
Turmeric powder / Manjal thool – 1/4 tsp
Chilli powder / Milagai thool – 1/2 tsp
Coconut – 1 tbsp , grated
Mustard seeds / Kadugu – 1/2 tsp
Urad dal / Uluntham paruppu – 1/2 tsp
Dry red chillies / Milagai Vathal – 3 in nos.
Asafoetida / Perungaya thool – a pinch
Curry leaves – a spring
Salt to taste
Oil – 2 tsp
Preparation
Wash , trim the ends and remove the fibre from both sides of the broad beans and chop them as shown in the pic. or you can chop them finely too.
Grab all your ingredients.
Heat oil in a kadai and splutter mustard seeds and urad dal.Add curry leaves and asafoetida and red chillies fry for few seconds.Add the onions and fry till golden brown.
Now throw in the chopped veggies and mix well.
Add half cup water and turmeric powder and chilli powder and required salt and mix well.
Allow the veggies to cook . (Keep in medium flame will take 10-12 mins)
Once the veggies get cooked add the grated coconut and give a good mix and keep in flame for 1 more min and switch off.
Serve this side with sambar rice or any mixed rice of your choice or even with rotis.
Notes:
You can cook them using pressure cooker too. But I like cooking these beans in pan as I feel sometimes it may get mashed in pressure cooker.
