There are many variations to make a basic chicken curry recipe and today I love to share this chicken curry that is prepared with few fresh ingredients from the kitchen pantry. There are some few recipes in our menu that we don’t feel bored while making them often and often . One such recipe is this chicken curry. And this curry will catch its presence in most of the occasions like get together / parties / at weekends . So its clear to you that this curry is thoroughly enjoyed by my family . This curry tastes great with plain rice . The preparation is quite simple and I believe this will sure occupy your to-do list. Basically I am fond of chicken and after coming to UK the only non-veg we used to buy is chicken . So I love trying lots of variations in my chicken curry . I tried the same curry with coconut paste , but it tastes fabulous only without the coconut touch. But however now-a-days we started buying mutton too. Whole Moong Dal / Green Moong Dal Curry / Pachai Pasi Paruppu Curry
Moong dal curry is a very healthy and yummy side for rotis as well as rice. I like this curry along with hot steamed rice with few drops of ghee over it. This dal is rich in protein and loaded with lots of nutrients. My mom used to make this curry often as it can be made in no time and also so good for health. It is called as pachai pasi paruppu in Tamil. You can make this so quick ,15 mins is more enough. And the cool thing is there is no need to soak the dal . Just wash with lots of water and pressure cook and make your curry . Normally I use sprouted mung beans for the same recipe . And I love that with fluffy pooris . Try this simple yet yummy side with your rotis / pooris / rice and let me know your views….

Ennai Kathirikkai Kulambu / Eggplants in a Tangy Gravy
This is a spicy tangy South Indian brinjal/eggplant curry.I am not a big fan of eggplants and truly speaking I never tasted this veggie during my childhood.I will not eat the eggplants but urge my mom to add it to the some curries like mutton kulambu / curry , sundal /kala channa puli kulambu .I love the aroma it gives to the curries..But now I strated loving it and having it frequently.It tastes nice when added to tamarind based curries. Few days before I made Eggplant Stuffed Curry too.I will post that soon.My red chillies are mild so I used more , adjust it as per your taste.My hubby loved this curry so much and hope you too so off you go to the recipe with step by step pictures….

Egg Masala / Muttai Masala
Egg curry is a easy comforting dish and loved by most of us. This is a spicy thick gravy that suits well with rice as well as rotis and pulao items. The main thing in this gravy is you have to cook the onions so soft that when we eat we should not feel the crunchiness of the onions. The touch of soft onions will give a wonderful taste to this masala. My mom will make this curry with a piece of coconut to make it creamy but I am happy to go with onions and tomatoes, if you like a creamy texture then add 1/4 cup of grounded coconut to the masala. A small amount of the gravy will be enough for a cup of rice. Hope you all love this as we enjoyed with our family. Try it and let me know your thoughts….

Chicken Salna / Parotta Salna
Chicken can also be done in a lots of variations And this is is one of those awesome preparations .My mom is very good at Non-Veg recipes and this is one of her delicious chicken item. It tastes great with rice and we tasted this curry with frozen parathas too ,it was wonderful. The fresh ingredients we use makes this curry super tasty.The more the time of marination gives more taste to the curry.I did this with a pressure pan , You can use Kadai too…Try it and see ,this will turn your favourite…

Spinach Dal / Pasalai keerai Paruppu kadaiyal / Palak dal

Nattu Kozhi Varuval Curry / Country Chicken Curry
This is prepared with country chicken.This chicken is the best in taste and also healthier when compared to broiler chicken.You might have tried other non-veg recipes but those which are prepared from this country chicken tastes excellent .Here in UK , I’m using Cornish hen it tastes good…but the real taste we get in India is extraordinary.
