This is a quick evening snack item for hungry kids , which I learnt from my grandma. My grandma likes sweet items ,so she makes quite often some or the other. This is one of those that I like very much. She is a wonderful cook and a complete vegetarian , when I was young some times I longed why grandma is not preparing non-veg as I loved non-veg items. Now she is living in our memories and we miss her a lot.
And hubby dear likes sweets much , so I prepare this often for him yet this time only I managed to take photos as it will vanish in minutes . This appam is crispy outside and spongy inside .Try it and I am sure you love every bite of this sweet. The oil should not be smoky or the appam will get burned easily as we are adding sugar. So take care while frying , better to keep the flame in medium and fry till golden brown . Now lets see the preparation…
Ingredients
Wheat Flour – 1 cup
Rice Flour – 1 tsp
Sugar – 3 tbsp
Baking soda – a pinch
Cardamom powder – a pinch (optional)
Water as needed
Oil for frying
Preparation
Take the flours and sugar in a bowl and mix well .
Add water little by little and make a semi thick paste without any lumps (like bhaji batter, you can also add a tbsp. of grated fresh coconut - that will make it extra tasty ) and set it aside for 2-3 mins. Now add the baking soda and a pinch of salt and give a good mix .
Heat oil in a kadai and pour this batter using a round ladle and fry till both sides turn nice golden colour. Appam will puff up nicely , keep the flame in medium and fry else the appam will turn black soon . Then place it in a kitchen towel to remove excess oil .
Notes :
- Increase or decrease the amount of sugar as per your taste . Sugar can be substituted with jaggery too .
- You can omit rice flour if you don’t like more crispiness. Sometimes I will not add rice flour , the taste remains the same .
