Rava Kesari is one of the popular Indian sweet which we make for most of the festivals . Not only for festivals I will make whenever I crave for something sweet and moreover I am a diehard fan of this semolina kesari . This is one of the easiest sweet preparation . Hubby got a pineapple last week so I tried this yummy kesari with pineapple and it was really a big hit . I recommend you to make this recipe with ripe pineapples that will add some more sweetness to the kesari . Be generous in adding ghee that will make the kesari melt in your mouth , the more the ghee added will make the kesari more tastier. Lets go to the recipe…
Ingredients
Rava / Sooji – 1 cup
Pineapple Chunks – 1/2 cup
Water – 3 cups
Ghee – 5-6 tbsp
Sugar – 1 1/2 cup
Cardamom / Elachi – 2-3 crushed
Cashew nut – 10-12 in nos
Raisins / Kismis – 2-3 tbsp
Preparation
Heat a kadai and dry roast the rava till a nice aroma rises ( take care not to burn them) and transfer it to a plate and set it aside .
Cut the pineapple into small pieces and set aside.
Now in the same kadai add a tbsp of ghee and fry the cashews and raisins and set them aside .
Add 3 cups of water and pine apple chunks to the same pan and bring the water to boil.
Now reduce the flame to low and add the rava little by little to the boiling water with constant stirring. Hold the rava in one hand and keep stirring with other hand to avoid lumps .
Cook till the rava gets cooked with constant stirring ( will take app 4-5 mins , if it cooks it will not stick to the pan ).
Now add the sugar and mix well . At this stage the consistency will be a bit watery so don’t panic , keep the flame low and keep stirring then it will thicken gradually.
Add the crushed cardamom and mix well.
Add the fried cashews and raisins to the kesari and mix well.
Finally add the rest of the ghee and give a good mix (the more the ghee added will make it more tastier ).
And switch off the flame and Enjoy this lip smacking sweet .
Notes :
- You can add kesari colour , if you want to make it colourful.
- You can replace crushed cardamom with 1/2 tsp cardamom powder .
- I love to add lots of raisins in my kesari , if you don’t like just omit it.
- Increase or decrease the sugar up to your taste.
- You can make plain kesari following the same recipe omitting pineapple .
My all time favourite kesari...Can have it anytime even during midnite.
