Pasta, a lot of different types available in the market. I try different recipes using pasta as hubby loves it so much.Very few foods are cooked and adored by the people worldwide and pasta is one of those which enters all types of cuisine. I used fusilli pasta You can try it with any variety of pasta.I added carrot and capsicum but beans , mushroom can also be added to make it more nutritious.Don’t overcook the veggies ,as the veg chunks will give a great taste.

Pasta – 200 gms
Onion – 1 Sliced
Tomatoes – 2 chopped
Garlic cloves – 3 chopped
Mint leaves – 2 tsp chopped
Coriander leaves – 2 tsp chopped
Capsicum –1 chopped
Carrot – 1 chopped
Chilli flakes – 1 tsp
Oregeno – 1 tsp
Cheese slices - 2 (you can use grated cheese too)
Salt to taste
Olive oil – 3 tsp
Get set your ingredients.
In the meanwhile heat water in a pan ,when it start boils add the pasta and little salt and cook as per the package instructions(mine is for 10 – 12 mins). Then drain it and set it aside.
Heat 2 tsp oil in kadai and add chillifalkes , mint leaves and corriander leaves and saute for a min.
Add the garlic and onion and fry for few mins.
Add the tomatoes and cook till mushy.And switch off.
Let it cool down and grind it to a smooth paste.
Now Heat 1 tsp oil in the kadai and add the oregeno and carrot and capsicum .Fry in medium flame for 5 mins .(I didn’t overcook the carrot as I like to have the veg bites while eating )
Then add the paste and salt and give it a stir.
Add the cooked pasta and blend it with the masala nicely.
Now spread the cheese slices leave it in medium flame for 2 mins(for melting).Then give a good mix .
And garnish with corriander leaves and serve hot.
