Mutton Varuval Curry / Mutton Fry curry

    Hi Friends,

    This is a very popular and a traditional dish from Indian cuisine . I got this authentic recipe of course from my mom who is a great cook to me.My mom prepares this curry in a kadai (i.e,not using pressure cooker) that was so great.The mutton we get in my moms place is so soft and cooks soon.But without cooker I can’t make this as the mutton I am getting here in my place is so hard and will take hours when I cook in a kadai.I love to toss some hot rice in  the  masala leftover in the pan.That tastes awesome.  This hot dish goes well with steamed rice or rotis or with any type of Indian flatbreads or with pulao rice.We loved this so much and try it , definitely you too will love it…

Gramathu Kozhi Kulambu / Village Style Chicken Curry

    This is a very aromatic Chicken Kulambu / Curry made with fresh ingredients.Before days people used to make curries with freshly ground ingredients.Now-a-days too in villages some of them use fresh masalas.I still remember whenever we visited my aunts place in my childhood she will make chicken kulambu with freshly grounded masala that too made using hands.(i.e) using ammikkal.

    And coming to the recipe this week I made this yummy  Gulab Jamuns .This is my first attempt with milk powder  and to my surprise it came out very perfect.Before I used to make  jamuns with store bought packs.But to be frank I never got a satisfying result.But  this time I am so happy to see this home made soft Gulab Jamuns .It turned out so soft within 15 mins when I immersed them in the syrup.Try this and let me know your thoughts.

Chettinad Pepper Chicken/Milagu Kozhi Varuval

This is a spicy chicken recipe from a well known cuisine.You all heard about the Chettinad dishes and its very famous for its wonderful flavour and spiciness with freshly grounded masalas.This is a yummy dish turned out a big success in my home .I got this recipe from net but added some extra ingredients to make it more aromatic.The crushed pepper should be added at the end (i.e) only when the chicken is completely cooked to retain its flavour.I served this with Chicken Briyani .My family totally enjoyed this chicken dish and try it you too will enjoy the flavour.

Hi friends,

Hope everyone had a great weekend.Today I am sharing one of my favourite dish.I am so fond of fish recipes.When I was a small girl if my mom make fish fry ,first I will pop into the kitchen and will start tasting.My dad  will buy only Viral meen ( butter fish ) those days as we find it more tastier than other fishes and my mom uses only simple ingredients (i.e) chilli powder, turmeric powder and salt for marination .That was really great in taste.

Once I happen to read a book that had a recipe note for this  Salmon fry in one of my neighbours house  and I loved that at first sight .From then whenever we buy salmon I used to prepare the same method.Thats a big hit in my family. And my kid loved it so much . Try this yummy fry you too will stick to this one.You can use any boneless fish for this fry ,Vajjiram meen/King fish suits perfectly.Lets go to the fish fry…

    Dear friends ,

    This is a traditional simple South Indian sambar recipe.You don’t need any special sambar  powder to prepare this yummy sambar.Sambar is a dal preparation with veggies and is made in every South Indian homes regularly and my mom prepares sambar atleast 3 times a week .Any vegetable can be used to make sambar but veggies like Drumsticks , Ladies finger , Radish makes it so flavourful.And this okra is my sons favaurite so I will prepare this once in a week. A group of home bakers helping each other to achieve perfection.

Baking a home made Baking a homemade bread, cake or cookies will give the best outcome. However in order to achieve the best results, a perfect recipe and right techniques are required.
 
We are a small group of home baker friends, who love and want to learn more about the nook and corners of baking.  We are planning to try out recipes from books/magazines and cooking shows.  Every member gets a chance to present their choice of recipe and share important points with the rest of the group.
 
Main purpose of this group is to learn the techniques, critic the procedure if there are ways to improve, and to eat a delicious food.
 
Rules are simple, we will choose one recipe and send it out to the group by 16th of every month and the reveal date will be 15th of the next month. On that day we will blog about it. A linky tool will be open during that time and each member can link their post.
 
First month we are going to do a recipe, 2nd and 3rd month will be a theme and the 4th month we will be back at a recipe. By doing in between recipes, we will able to learn more.

Ennai Kathirikkai Kulambu / Eggplants in a Tangy Gravy

This is a spicy tangy South Indian brinjal/eggplant curry.I am not a big fan of eggplants and truly speaking I never tasted this veggie during my childhood.I will not eat the eggplants but urge my mom to add it to the some curries like mutton kulambu / curry , sundal /kala channa puli kulambu .I love the aroma it gives to the curries..But now I strated loving it and having it frequently.It tastes nice when added to tamarind based curries. Few days before I made Eggplant Stuffed Curry too.I will post that soon.My red chillies are mild so I used more , adjust it as per your taste.My hubby loved this curry so much and hope you too so off you go to the recipe with step by step pictures….

Meen Kulambu (Choodai meen) / Sprats Fish Curry

This is a very traditional non-veg recipe.You all heard about the hot spicy tangy South Indian fish curry.We used to buy fresh alive viral meen (butterfish) in India , that tastes heavenly.But I can’t find those here.I learnt this recipe from my dear mom and I loved it and tried it a lot many times.You can use any type of fish to prepare this curry.I tried this kulambu with  sankara meen (red snpper) , salmon ,sea bass (koduvai) .This time my hubby bought sprats.I like the little fishes and the taste is also good. We had with of course salmon fry.Lets see the preparation….

Kaalan Varutha Curry / Mushroom Curry

I love mushrooms.One of my favourite veggie.The coconut masala blend with the mushroom gives a finger licking taste . My mom never cooked mushroom in my childhood as it was a rare veggie those days,but now-a-days its so common in all the places.My periamma (my moms cousin sister) makes a flavourful gravy / kulambu out of this mushroom.Whenever she makes she will give me some as she lived very near to us those days.After marriage I started cooking mushrooms and all in my family loves mushroom.

 

Coming to the recipe , this is a spicy dish that goes well with rotis and rice.My mom cooks mutton varuval nearly the same way.I tried with mushrooms and the result is really so good.I always used to have mushrooms with chappatis but this time I tried wth rice.It was fabulous.We loved it very much.This is  a wonderful dish for all mushroom lovers .Hope you too will love so go ahead and try this at your home and enjoy with your loved ones….

Cabbage Stir Fry / Muttaikose Poriyal

This is a simple stir fry . I like cabbage and its so good for health.It contains lots of vitamins and fiber in it.This poriyal is  so easy to make with simple ingredients.This is one of the item that I make frequently.There are many variations  made in this dish.I made it very simple.You can add cooked channa dal or moong dal to it .This stir fry goes well with spicy curries and even perfect for rotis.I usually serve this with spicy puli kulambu.Lets go to the preparation….

Chicken Kurma / Kozhi Vellai Kurma

Hi friends ,

Today I come with a chicken recipe .This is one of the wonderful recipe I learnt from my mom.I am a big fan of this kurma from my childhood.Whenever my mom plan to do briyani for lunch she will prepare this kurma in large quantity for breakfast .We have it with soft idlis.Believe me this a delicious side for hot idlis.A person who normally has 4-5 will have nearly double the quantity with this yummy side .And we will have the rest of the  kurma with  briyani  for lunch.This is a good accomplishment with Briyani.Generally my mom prepares this kurma with mutton.But I don’t find soft mutton in my place so I used chicken.It tasted fabulous and my hubby loved it. Today’s recipe is a easy comforting dish ,Snake gourd Kootu .Kootu is the combination of  veggies and lentils and one of the famous side dish in southern part of India.This is my favourite dish.Its so good for digestion and a very healthy side dish.I find it perfect with poondu puli kulambu and can be had with curd rice / rotis / even plain rice.The ingredients and the procedure is so simple and can be made in no time.My mom will prepare this kootu using moong dal too.If you like then add moong dal instead channa.Lets see the preparation…

This is one of my all time favourite curry.Any recipe that includes paneer makes that dish awesome.One cool thing about paneer is it nicely blends with any type of masala and gives a wonderful taste.I like to add kasoori methi powder in all my paneer dishes as it gives a fantastic aroma.Usually children love paneer but my kid hate it although I will make it twice a month as my hubby and me love it.Its a good dish to be made at parties  or any festive occassions.Try this curry ….yoy’ll love it for sure….

A simple thayir pachadi with okra is  our menu today.I prefer ladies finger for pachadi but red pumpkin , ridge gourd can also be made as a thayir pachadi.This is a easy dish but need some patience because of the sliminess of this veggie. Dear friends,

Todays menu is garlic in tamarind sauce.You all know about the medicinal values of garlic.Its rich in iron and contains lots of vitamins in it.And its so good for feeding mothers.I already posted poodu puli kulambu to check CLICK HERE .In this recipe I added brinjal , You can prepare this using ladies finger / okra too.I like to use sesame oil for poondu kulambu not only because of its added flavour to the gravy but also for its  health  benefits.You can use any type of cooking oil. Today I like to share a popular basic South Indian breakfast item.This will be the regular  breakfast or dinner item in most of the sout indian homes.This batter can be kept in fridge for a week.This is very handy in busy mornings and sometimes in lazy evenings.Just make a favourite chutney and in minutes we can make Spongy Idlis or Crispy Dosas.I hope this will be very helpful for the beginners. In India I used wet grinder for grinding the batter but here in UK I'm using mixie for grinding .I find no difference ,its so nice .Here comes the traditional recipe with step by step pictures....

I  try different recipes using pasta as  hubby loves it so much.Very few foods are cooked and adored by the people worldwide and pasta is one of those which enters  all types of cuisine. I used fusilli pasta You can try it with any variety of pasta.I added carrot and capsicum but beans , mushroom can also be added to make it more nutritious.Don’t overcook the veggies ,as the veg chunks will give a great taste.

Kovakkai poriyal / Tindora fry / Ivy gourd fry

Kovakkai fry is a yummy simple fry that tastes great with  for sambar/rasam rice.I love this vegetable .This is not a familiar veg to me,as i never seen this veg in my home town.After marriage when we stayed at Bangalore I come over this veggie and liked the taste.Here in Leeds this is one of the veg that is available all time.So I used to do this very frequently and also my kid likes it too much.Besides kovakkai has lots of medicinal values too ,its rich in minerals,protein and fibre and good for diabetics.And here comes the recipe….Try it and see…and let me know your outcome

Egg Masala / Muttai Masala

Egg curry is a easy comforting dish and loved by most of us. This is a spicy thick gravy that suits well with rice as well as rotis and pulao items. The main thing in this gravy is you have to cook the onions so soft that when we eat we should not feel the crunchiness of the onions. The touch of  soft onions will give a wonderful taste to this masala. My mom will make this curry with a piece of coconut to make it creamy but I am happy to  go with onions and tomatoes, if you like a creamy texture then add 1/4 cup of grounded coconut to the masala. This is prepared with country chicken.This chicken is the best in taste and also healthier when compared to broiler chicken.You might have tried other non-veg recipes but those which are prepared from this country chicken tastes excellent .Here in UK , I’m using Cornish hen it tastes good…but the real taste we get in India is extraordinary.

Paneer Butter Masala

This is a very popular North Indian dish made from Indian cottage cheese .I love paneer recipes very much as it blends with the gravy and tastes awesome. Piping hot naan and paneer butter masala is the one we prefer in restaurants for dinner.Once I prepared this searching in net,from that time it turned out our favourite dish at home.But I will not prepare this so often as the name implies its more rich due to butter and the gravy is thickened by using cashew paste rather than just cream. I avoid adding food colour so the gravy will not be red as you see in hotels .You cannot go wrong with this even you are preparing it  for the first time, try it for yourself and see….
