Gulab Jamun / Diwali Sweets

    The celebration of Diwali is one of  best and cheerful moment. Hope everyone are enjoying this brightest day with sweets and snacks   with your  family and friends.I am wishing you a happy and joyful year ahead.May this Diwali brings light of wealth and health  To you and your family.

    And coming to the recipe this week I made this yummy  Gulab Jamuns .This is my first attempt with milk powder  and to my surprise it came out very perfect.Before I used to make  jamuns with store bought packs.But to be frank I never got a satisfying result.But  this time I am so happy to see this home made soft Gulab Jamuns .It turned out so soft within 15 mins when I immersed them in the syrup.Try this and let me know your thoughts.

    Ingredients

     

    Milk powder – 1 cup

    Ghee / Butter / Dalda – 2 tbsp

    Maida / All purpose flour – 2 tbsp

    Semolina / Rava – 2 tbsp

    Baking powder – a generous pinch

    Milk / Cream – 6 tbsp

    Sugar – 1 cup

    Water – 1 cup

    Cardomom powder – 1/2 tsp

    Oil / Ghee for frying

    For Garnishing

    Coconut flakes/ Pistachio/Almonds/ Cashews - (Optional )

    Preparation

     

    Sift milk powder , maida , rava and baking powder .And mix them well.

     

     

    Add the ghee and mix it evenly using your palms.

     

     

    Now add the cream to the milkpowder mixture and make a smooth soft dough (First add 4 tbsp and if you feel your dough is dry and hard then add the rest of the cream and make a smooth dough.  I added 6 tbsp).

    Cover it with a kitchen towel and let it rest for 20 mins.Make small balls out of the dough using your palms . 

     

     

    Heat oil in a wok (The temperature to fry the jamuns is once you drop a small ball in the oil it should not rise atonce ,the ball should sit in the bottom of the pan for 3-4 seconds and then it should rise up).

    Add the balls and fry it in medium flame till it turns golden brown evenly in both sides (Keep constantly rolling the balls in the oil to get evenly cooked and coloured). Add 7-8 balls in each batch ( it depends on the size of the wok you are using).

     

     

    Remove them and place on a kitchen tissue to absorb excess oil.

    Making the Sugar Syrup

     

    Take the sugar and water in a pan.Place it in the flame and allow it to boil till the sugar dissolves completely with stirring in between . Add cardamom powder and allow to boil for  2 more mins and switch off.

     

    Now drop in the fried jamuns in the hot sugar syrup and keep immersed.Let it rest for atleast 20-30 mins .

     

     

    Garnish with Chopped almonds and Cashews and enjoy this yummy treat with your Family.

     

    Notes:

  • Make the dough soft..

  • Keep the oil in correct tempereture as I mentioned above.

  • Always drop the fried jamuns in hot syrup .If your syrup cools down just heat it and add the balls.
