I am posting this recipe after a long time. Thanks for the continuous support from all the viewers of TamilsKitchen. And coming to the recipe , its a colourful looking yummy sweet made with a nutritious ingredient beetroot. Give it at try and share the outcome.
Ingredients
Beetroot – 1 , big sized
Sugar – 75 gms
Ghee – 2 tsp + 2 tbsp + 1 tsp
Cardamom powder – a generous pinch
Milk – 100 ml
Cashew – 10 - 12
Raisins – 1 –2 tsp
Preparation
Remove the skin of the beetroot and give it a wash.
Now shred the beetroot and keep it aside. Take all your needed ingredients.
Heat 2 tsp of ghee in a kadai and add the cashew and raisins and fry till golden and set them aside.

Now in the same kadai add 2 tbsp ghee and throw in the shredded beetroot and fry it nicely for 4-5 mins in medium flame (This helps in getting rid of the raw smell of the beetroot ).

Add the milk and give a good mix.

Let it boil in medium flame for 10-12 mins (stir it up now and then to avoid burning).

Now the milk is mostly absorbed , so at this time add the sugar and give a good mix, the consistency turns watery again.

Add the cardamom powder and mix well .( I blended 2 cardamoms with the sugar and added to it as I didn’t have cardamom powder in hand).
Add a tsp of ghee to make it more shiny.
Let it cook for 12-15 mins in low flame with stirring now and then, until it reaches the halwa texture.
Add the fried nuts and raisins and mix well.

The gorgeous looking beetroot halwa is ready now. Transfer it to a serving bowl and enjoy.
