This is one of my favourite curry that is fast to prepare and tastes delicious.Eggs can be prepared in a lots of ways and dishes prepared with egg tastes awesome.And eggs are too handy for me i.e ,if I have no mood to cook any side dish ,eggs are my savers.And also eggs are a good source of high protein. They are very healthy and full of nutrition.Now to the recipe….
Egg – 4
Onion – 2 chopped
Tomato – 2 chopped
Gingergarlic paste – 1 tsp
Turmeric powder / Manjal podi – 1/2 tsp
Chilli powder / Milagai Thool – 1 tsp
Coriander powder / Kothamalli Thool – 2 tsp
Garam Masala powder – 1/2 tsp
Oil – 3 tsp
Mustard seeds / Kadugu – 1/2 tsp
Urad dal / Ulunthamparuppu - 1/2 tsp
Fenugreek seeds / Venthayam – 1/4 tsp
Asafoetida / Perungayam – a generous pinch
Salt as needed
Boil the eggs for 12-15 mins .Shell them and make slits on them and keep aside.Set right your ingredients to make the curry.
Heat oil in kadai and splutter mustard seeds , urad dal ,fenugreek seeds. Add asafoetida and 8curry leaves and fry for a min.
Add the onions,turmeric powder and little salt (adding salt will make onions cook faster )and saute.Add ginger garlic paste and fry till hte raw smell goes off.
Add the tomatoes and cook till mushy.
Add the chilli powder and coriander powder and required salt and mix well.
Now pour two cups of water and allow it to boil for few mins. Simmer it for a while or until the oil floats on the top.
Now add the garam masala powder and the eggs and let it boil for another 3 mins and switch off the flame.
Now serve the curry with steamed rice or roti.
