We all know that carrots are very healthy and rich in vitamins and minerals.I like to have raw fresh carrots and is so good for your eyesight.This is a simple,quick and delicious recipe that can be made in few mins.It is a kids friendly dish too.Try this combo of carrots and eggs , my son liked it very much. Carrot – 3 shredded
Onion – 1 finely chopped
Green Chillies – 2 finely chopped
Egg – 2
Mustard seeds / Kadugu – 1/2 tsp
Uraddal/ Ulunthamparuppu – 1/2 tsp
Curry leaves – 1 spring
Asafoetida / Perungayathool - a pinch
Oil – 1
Salt as needed
Take all your ingredients.Crack open the eggs in a bowl,add little salt and beat them.and keep it aside.
Heat oil in a pan and splutter mustard seeds and uraddal .Add curry leaves and asafoetida and fry for a min.
Add the onion and green chillies and fry till they turn golden brown.
Add the shredded carrot and the salt and mix well.Saute them till the carrot turns soft.It will take only few mins approximately 5 to 7 mins.
Make a space in the pan for the eggs.Now add the beaten eggs into the pan and scramble.
Now mix the carrot and the egg . Fry till the egg is well coated with the carrot and cooked.
