TriColourPoriyal / Moovarna poriyal

This ia a very usual poriyal we make at home often.This poriyal is served in marriage celebrations too.As the name implies this colourful poriyal catch the attraction of kids , and sure they finish it off. The cool thing is it can be prepared in no time.Here is the simple recipe…

Ingredients

Carrot – 3 medium sized

Beans – 15 in no.

Cabbage – 1 cup chopped

Onion – 1 chopped finely

Greenchillies – 2

Coconut – 2 tsp shredded

Oil –1 tsp

Salt as needed

For Tempering

Mustard seeds / Kadugu –1/2 tsp

Urad dal / Ulunthamparuppu –1/2 tsp

Dried red chillies – 3

Asafoetida – a pinch

Curry leaves – 1 spring

Preparation

Grab all your ingredients and set it ready.

Heat oil in a kadai and splutter mustard seeds and urad dal.Then add red chillies , asafoetida and curry leaves and fry for a min.

Add the onion and greenchillies and fry till they turn light golden colour.

Add the chopped veggies and salt and mix well. Sprinkle some water and cover the lid and let the veggies cook in medium flame.

Once they get cooked mix in the shredded coconut  and switch off the flame.

Serve it as a side dish for spicy puli kulambu.

Notes :

Try not to overcook the vegetables, it will  give a good taste.
